On the bright side, though, poffertjes are pretty quick and easy to make — as long as you have a poffertjes pan! Clearly, she knows me well. Since then, poffertjes have become one of my favorite things to make — whether for breakfast or a late-night snack! Poffertjes are essentially like mini American pancakes — only they are super light and fluffy, spongy, and cute, and so very Dutch. And about 20 times more delicious. The ingredients necessary for this poffertjes recipe are pretty standard. To make poffertjes the proper way, you will need a poffertjes pan.
The poffertjes pan allows the pancakes to take their typical round shape, allowing for their fluffy texture. You will love these sweet treats so much, you will make them again and again. Buying your own poffertjes pan will be worth the investment. These fluffy little delights are everything you want in a sweet treat, and so much more. Their light, spongy texture, paired with salty melted butter and sweet powdered sugar really hits the spot.
Every single time. In the microwave or a pan, heat milk until slightly warm just above lukewarm. Set the mixture aside for 10 minutes, until mixture looks bubbly and foamy. Add the egg and the liquid mixture to the dry ingredients.
Mix with a hand whisk or an electric mixer until you have a smooth, silky batter. Cover with a clean, damp cloth and set aside for one hour, or until the batter has about doubled in size. Transfer the batter into a piping bag or a squeeze bottle. Grease your poffertjes pan with butter and heat it over medium heat. Once the pan is hot, fill up each poffertjes mold with batter, then cook each side for one minute, using a fork or butter knife to flip.

Or use a regular pan you use for pancake and pour little bits of batter on it. Add the yeast. Slowly add the milk, while whisking continuously, until all milk is poured into a bowl. Once the milk and flour mixture has been incorporated you can add the eggs. At this stage I prefer to switch over to an electric hand mixer to ensure that there are no lumps in the batter.
However, you still use the whisk if you prefer. Make sure you mix the batter till everything is smooth and fully incorporated. Cover the batter with plastic wrap and leave to rest at room temperature for an hour and a half. Once the batter has rested I like to transfer the batter over to a special dispenser bottle.
Make sure your pan is nice and hot and butter the holes. Pour in the batter to fill up the holes. Bake the poffertjes till the bottom is starting to brown and turn them over. I like using a skewer for that. Sometimes I need a little help of another skewer, or in this case a fork to help turn them over. The heat will need to be constantly controlled to avoid burning. With the electric makers, since they are coated with a non-stick surface you can get away with just a light brush of butter over the surface making the poffertjes are a little healthier to eat.
The heat is distributed by an element under the plate. Depending on the quality of the maker you may or may not get an even heat distribution. My little Dutch pancake maker has three dimples at the top never get as hot as the rest, and the pancakes from these need a little longer to brown. Make them roughly 4 cm in diameter.
You could always use a similar type pan, like the Japanese takoyaki pan, Danish aebeleskiver pan, Australian gem irons or another similar dimpled pan. The dimple size of these pans will vary both in width and depth.
Some of these are not made in cast iron and are not designed for stove top cooking but rather baking, so take this into consideration if you choose to use one of these. An electric cake pop maker can be used. The dimples are similar in diameter, but are slightly deeper than the little Dutch pancake maker.
These fluffy mini pancakes are traditionally served hot with a generous dusting of icing sugar powdered sugar and butter. But there is nothing stopping you from adding your favourite pancake topping to these. My favourite way is to eat them at room temperature with jam and cream. Yes, these can be frozen. Allow them to cool completely before placing them in the freezer.
To freeze, place them in a single layer, onto a tray lined with baking paper, then place the tray in the freezer for several hours. After the poffertjes have frozen on the tray, transfer them to a freezer bag or container. These can be kept in the freezer for about 3 months. You can also use these specially shaped pans for Gem Scones. The pan is also referred to as a Munk Pan. Non-stick aluminum pans should be washed by hand with hot sudsy water, before and after use. Wash your new unseasoned cast iron or cast aluminum pan by hand with hot sudsy water, then rinse well and dry thoroughly.
The pan must be seasoned before use, by rubbing it with cooking oil over a medium flame until the oil starts to smoke. After seasoning, use only hot water and a stiff plastic-bristle brush for cleaning, so that your pan will retain its non-stick performance. Sieve and or mix all the flour, make a depression in the middle and pour a small portion of the lukewarm milk, in which the yeast has been dissolved first, into the hole.
Let the poffertjes become light brown and dry at the bottom. Sprinkle generously with the powder sugar and put a small lump of butter on top of the poffertjes. Make a little hole in the flour and put a yeast mixture in it. Do not stir. Cover the hole with flour and let it all rest for 15 minutes in a warm place. Then stir it up. Add the eggs and a little bit of melted butter to give the dough the desired consistency.
Stir once more.
Put the poffertjes griddle on the stove or oven and lightly grease the cavities. Fill the cavities only half-way, or less, with the dough. Bake the poffertjes quickly until they are golden brown, then use the poffertjes fork to turn them around, baking the other side golden brown as well.
Arrange the baked poffertjes on a warmed plate. Dust with powdered sugar and put a lump of butter on them before serving. Serve hot. Sift the flour with baking powder and baking soda, then add it to the egg mixture, alternating small amounts with the addition of the buttermilk, as you continue mixing. Heat the Aebleskiver pan. The Aebleskiver is done when a toothpick, or cake tester, inserted in the center comes out clean. Best when served warm.
